How Non-Alcoholic Beer Is Made, and Why It Finally Tastes Like Beer

Non-alcoholic beer was, for most of its existence, bad. Thin, sweet, vaguely of wort, and drunk mainly by people with no alternative. In the last decade it has become genuinely good, and the reason is not better recipes — it is that brewers stopped taking alcohol out and started designing beer that never had much.

The short answer

There are four routes. You can stop the fermentation before it produces much alcohol, boil the alcohol off, filter it out through a membrane, or use a yeast that barely makes any in the first place. Each removes alcohol at a different cost to the beer, and the last one is why the category improved.

Why removing alcohol is hard

Alcohol is not a neutral passenger. It carries aroma compounds to your nose, it contributes body and a faint sweetness, and it gives beer the warming quality that makes a strong ale feel substantial.

Take it out and three things go at once: the beer smells less, feels thinner, and tastes sweeter, because the sugar that alcohol was balancing is still there. That last one is the signature of old-fashioned non-alcoholic beer — a sweet, worty, unfinished flavour that no amount of hopping covers.

The four methods

1. Arrested fermentation. Chill or filter the yeast out early, before it has eaten much sugar. Cheap and simple, and it produces exactly the sweet, worty result described above, because all the sugar the yeast did not eat is still in the glass.

2. Vacuum distillation. Brew a full-strength beer, then boil the alcohol off — but under a vacuum, which drops alcohol’s boiling point from about 78°C to the mid-30s. Low heat means the beer is not cooked. Good systems capture the aroma compounds that come off with the alcohol and add them back afterwards. Expensive, and the current standard for quality.

3. Membrane filtration. Push finished beer through a membrane fine enough to separate alcohol and water from everything else, then add the water back. Reverse osmosis, essentially. No heat at all, so nothing is cooked, but some flavour crosses the membrane with the alcohol.

4. Special yeast. The newest approach and the one that changed the category. Certain yeast strains — Saccharomycodes ludwigii is the common one — ferment the simple sugars that produce beer flavour while barely touching maltose, the main fermentable. You get real fermentation character and almost no alcohol, without removing anything.

What the label actually means

The terms are not interchangeable and they are not standardised across borders.

  • Alcohol-free generally means at or below 0.05% in the UK, and 0.0% is a separate, stricter claim some brewers make.
  • De-alcoholised means it had alcohol and it was removed — typically to 0.5% or below.
  • Low alcohol is a wider band, often up to 1.2%.
  • In the United States, “non-alcoholic” permits up to 0.5% by volume.

The practical point: a beer sold as non-alcoholic may contain 0.5%, which is roughly what you find in a ripe banana or a glass of orange juice, but is not zero. Anyone avoiding alcohol entirely — for medical, religious or recovery reasons — should look for 0.0% specifically, and that is a distinction worth making plainly rather than glossing over.

Why it goes off faster

A practical consequence people are rarely told. Alcohol is antimicrobial, and taking it out removes one of the things keeping beer stable. Non-alcoholic beer is therefore more vulnerable to spoilage organisms and is usually pasteurised or sterile-filtered as a result — and it has a shorter useful life than the full-strength equivalent.

Buy it fresher, keep it cold, and do not cellar it. The general case for and against keeping beer is in which beers are actually worth cellaring, and non-alcoholic beer sits firmly on the drink-it-now side.

What to expect from a good one

The styles that survive the process best are the ones that were not relying on alcohol for their structure: hoppy pale ales, where aroma does the work; wheat beers, where the yeast character and the protein body carry it; and dark beers, where roast malt fills the gap.

The hardest styles to reproduce are exactly the Belgian ones. A tripel is 9% and dry, and both of those facts come from alcohol. Remove it and there is very little left to be a tripel with, which is why Belgium’s contribution to this category has been modest.

Ordering one out

Two practical notes for a bar rather than a shop.

Ask what they have rather than whether they have “a non-alcoholic beer”. Many venues stock one forgettable industrial option in the fridge and a much better one they have not thought to list, and the difference between the two is larger than the difference between two ordinary lagers.

Ask for a glass. This matters more here than with full-strength beer: the aroma is the part the process most damages, and drinking from the bottle removes what is left of it. It also, frankly, makes the experience of not drinking feel less like a penalty — which is a small thing, and not nothing.

What that looked like on a real list

Nothing, and that is worth saying rather than skipping. Meyboom’s archived lists carried no non-alcoholic beer at all. The lightest thing on the bottle list was Amstel Light at 3.5%, and the lightest draught was Michelob Ultra at 4.2%.

That is an accurate picture of a Belgian-focused beer bar in 2023 and 2024, and it dates the archive as much as the prices do. The category has moved quickly since, and a list built today would look different. Both archived lists are still on the site — the beer list and the bottle list.

Frequently asked questions

Does non-alcoholic beer contain any alcohol?

Usually a trace. Most “non-alcoholic” beer is at or below 0.5% ABV. Products labelled 0.0% are the ones to look for if you need none at all.

How is the alcohol removed from beer?

By vacuum distillation or membrane filtration, or it is never produced in quantity — either by stopping fermentation early or by using a yeast that cannot ferment maltose.

Why does non-alcoholic beer taste sweet?

Because unfermented sugar remains. It is the signature of the arrested-fermentation method, and the newer approaches largely avoid it.

It contains less alcohol and usually fewer calories. Beyond that, treat health claims about any beer with suspicion.
