Why Is Belgian Beer So Strong?

Order a pilsner almost anywhere and you are drinking something around 5%. Order a Belgian ale and you may be handed 9% in a glass the same size, poured with no particular ceremony and no warning. It is the single most common surprise on a Belgian list, and it is not an accident of tradition — it is four brewing decisions stacked on top of each other.

The short answer

Belgian brewers add sugar to the kettle, use yeast strains that tolerate high alcohol, ferment warm, and then ferment the beer a second time in the bottle. Each step adds alcohol. Together they push a beer well past what malt alone would produce, and — this is the part that catches people out — they do it while making the beer lighter in body, not heavier.

Sugar the barley never provided

The most important ingredient is the one that is not grain. Belgian brewers routinely add sugar directly to the boil — often a candi sugar, sometimes plain sucrose, sometimes a dark syrup.

This is counter-intuitive if you assume sugar makes beer sweet. It does the opposite. Simple sugars are almost entirely fermentable: yeast consumes them completely and converts them to alcohol and carbon dioxide, leaving nothing behind. Malt, by contrast, contributes plenty of sugars that yeast cannot fully digest, and those leftovers are what give a beer body and sweetness.

So adding a kilo of candi sugar raises the alcohol without adding a gram of residual sweetness or a shade of extra body. A tripel brewed to 9% on malt alone would be thick, sticky and heavy. Brewed with sugar, it finishes dry and drinkable at the same strength. Darker candi syrups also bring caramel and dried-fruit flavours of their own, which is where a good dubbel gets its raisin and plum character.

Yeast that keeps going

Alcohol is toxic to the organism producing it. Every yeast strain has a point at which it stalls, and for a great many brewing strains that point arrives somewhere around 8 or 9%.

Belgian strains are not like that. The classic abbey and Trappist yeasts are unusually alcohol-tolerant, and they are also highly attenuative — meaning they keep eating available sugars for longer, leaving less behind. A strain that stops at 6% imposes a hard ceiling on the beer. A strain that will work up to 11 or 12% removes the ceiling entirely.

Belgian brewers also ferment warm — frequently in the low-to-mid twenties Celsius, where an English or German brewer would be working cooler. Warm fermentation is faster and more complete, and it makes the yeast far more expressive: the banana, pear, clove and peppery notes in a Belgian ale are fermentation products, not additions. Those aromatics do something useful here. A beer that smells of fruit and spice reads as complex rather than boozy, and the alcohol hides inside it.

A second fermentation, in the bottle

Most Belgian ales of any standing are refermented after packaging. A dose of fresh yeast and a little more sugar goes into the bottle, the cap or cork goes on, and fermentation starts again inside the glass.

This is done chiefly for carbonation and for shelf life — bottle-conditioned beer produces its own carbon dioxide and its live yeast scavenges oxygen, so it keeps and even improves for years. But it also adds a final increment of alcohol, typically a few tenths of a percent, on top of whatever the beer left the fermenter at.

It is also why you will be told to leave the last centimetre in the bottle. That sediment is the yeast that did the work.

Why the strength does not announce itself

Put the four together and you get the defining Belgian trick: a beer that is pale, dry, highly carbonated, fruity and 9%. Nothing in the taste warns you. There is no heat, no syrup, no heaviness — the sugar saw to that, and the yeast character covers the rest.

The style that does this most notoriously is the Belgian golden strong ale, which we have written about separately in the style that hides its strength. But the same principle runs through tripels, quadrupels and most of the abbey range.

The practical consequence is worth stating plainly: a 330ml bottle at 9% carries roughly the same alcohol as two-thirds of a pint of lager and a shot on the side. Belgian glassware is small for a reason.

What this means for how you drink it

None of the above is trivia. If a beer is twice the strength of a lager and gives you none of the usual signals, the signals have to come from somewhere else, and on a Belgian list they come from the menu.

Three habits cover it. Read the ABV before you order rather than after. Treat the small glass as the correct measure rather than a mean one — a 250ml pour of a 9% tripel and a pint of 4.5% bitter are almost exactly the same amount of alcohol. And expect to spend longer over it: these are beers built for sipping, and they improve as they warm.

Frequently asked questions

Is all Belgian beer strong?

No. Belgium brews plenty of table beer, session-strength pilsner and witbier at 4-5%, and the lambics are often weaker still. What is true is that the styles Belgium exports and is known for skew strong.

Does adding sugar make beer taste sweet?

Not if it is a simple sugar. Yeast ferments it out completely, so it raises alcohol and lowers body. Sweetness in a finished beer comes from unfermentable sugars contributed by malt, not from added sucrose.

What is candi sugar?

Sugar crystallised from beet or cane syrup, sold clear or in progressively darker grades. The clear kind is essentially pure fermentable sugar. The dark kind has been cooked to develop caramel and dried-fruit flavours, which then carry into the beer.

Why is Belgian beer served in such small glasses?

Does the yeast in the bottom of the bottle matter?

It is harmless and some drinkers pour it in deliberately. Most Belgian brewers advise against it: it clouds the beer and adds a bready flavour that the brewer did not intend you to have. Pour steadily and stop when it starts to move.

The short version

Belgian beer is strong because brewers add fermentable sugar, use yeast that will not quit, ferment warm, and ferment again in the bottle. It does not taste strong because the sugar keeps it dry and the yeast fills it with fruit and spice. Read the number on the label before you decide how many you are having.
